Sum ups

Here I go with the bullet points again - time just slips away from me. LOL

  • I’m leaving tomorrow for the Creative Photography Retreat in Dallas. Which can’t be hotter than it is here, right? Burning CDs, thinking about laundry (still at the thinking stage)
  • We have about 15 tomatoes on our three tomato plants, ranging from barely-there to one that fits nicely in my palm. Looking forward to fresh tomatoes in a few weeks, and I truly can’t believe that I GREW SOMETHING! That GREW! Seriously.
  • Trying to make it through the heat of the summer - the worst time of year here. The phrase “sun beating down” has taken on new meaning since moving here. Right now, escaping means the kids downstairs watching Sword in the Stone and drinking Crystal Light fruit punch on ice. :)
  • Last year, way at the end of the season, I bought this runty little peach tree from Lowe’s garden center on clearance. I thought it was cute - it looks a little Seussian - but I never expected it to actually GROW any peaches, at least not for a few years. The thing is maybe 3 feet tall with all its leaves on, but it surprised us by growing TWO beautiful, perfect peaches! The birds got one. But a couple weeks ago, we picked the other, and cut it into tiny quarters for each person in the family. It was so delicious, so puckeringly jucily amazing, I think I cried a little bit.
  • We’ve been grilling quite a bit, but we’re looking for more recipes - do you have a favorite grilling cookbook?

Ok, more later. Apparently Sword in the Stone isn’t quite as riveting as I had hoped it would be…

Yes! I do. We have finallly mastered the art of grilled pizza. Your tomatoes will come in very handy on this one.

Grilled margaretta pizza

1 package of pizza crust mix(I buy the 44 cent pack from walmart and it tastes just fine)
spagetti sauce(any kind, I like a lot of garlic)
shredded pizza cheese(we buy ours from Costco and freeze it for lots of pizzas)
sliced tomatoes
basil
olive oil

Make the crust as directed and let set 5 minutes. Roll our super thin on a pizza pan with holes in it. You can find these pretty easy these days and they even have throw away versions. Get your crust as thin as possible rub with olive oil. Add sauce and basil, add thin layer of cheese and then tomato slices and more cheese.

To grill it:
We have a three burner grill I turn the side burners on med and the center off. I add the pizza to the center. Every five minutes I spin the pizza. After it has been grilling for about 10 minutes I shake it a little(still on the grill) Pull off when the bubbles start and get brown on the cheese....YUMMY! You can make a grilled pizza for just a few bucks!

My husband commands the grill at our house, but he really likes "How to Grill" by Steven Raichlen:
http://www.amazon.com/How-Grill-Complete-Illustrated-Techniques/dp/0761120149/ref=sr_1_1?ie=UTF8&qid=1248310565&sr=8-1

It has a lot of good pictures and information, all the recipes we've tried have been tasty too. :)

I cannot wait for your classes this weekend. I drove in today so I had a little extra time to go to Ikea (I've never been) and over to Grapevine Mills to the Nike Outlet. GET HERE ALREADY!

Hi Jessica,
It's not in a cookbook but here is a stand-by grill recipe my husband invented

Marinade:
soy sauce ( about 1/2 cup)
toasted sesame oil (about 2 Tbsp)
garlic ( a few cloves)
ginger (we get it in jars) ( about 1 tsp)

Meat:
flank steak or chicken (boneless or bone in breast)

marinate meat for @ 1 hour

grill on medium until done

great with rice and salad

sorry about all the abouts, we're a little intuitive around here
My kids always like it though

I bought my husband Serious Barbecue by Adam Perry Lang for father's day. It's kind of a hefty read, but the recipes do not disappoint. The grilled corn on the cob with cillantro lime pesto is TO DIE for. Seriously. I licked my plate.
